Apricot Almond Crisp

 

  • 1 C flour
  • 10 T butter
  • 1 C rolled oats
  • 1 C almonds
  • ½ C brown sugar
  • ½ tsp salt
  • ¼ tsp chinese 5 spice
  • 2 qts apricots
  • 1 pt raspberries (or any other fruit you have around—or skip it)
  • 1 T grated fresh ginger
  1. Heat the oven to 350F
  2. Cut the butter into the flour until it is pea sized
  3. Add the oats, almonds, brown sugar, salt, and 5 spice and mix by hand until the mixture forms loose clumps
  4. Chill minimum 10 minutes
  5. Halve the apricots
  6. Combine the apricots, raspberries, grated ginger, and a pinch of salt
  7. Lay the apricot mixture in a baking pan
  8. Top with the oat mixture
  9. Bake until golden brown and fully set (about 45 minutes)
  10. Serve with whipped cream or whipped sour cream
