Beet Oil


  • 1 large beet
  • 1 C olive oil
  • 1 tsp salt
  1. Wash the beet to remove the dirt
  2. Place onto a large sheet of tin foil and drizzle with olive oil and salt
  3. Wrap up and place into the oven at whatever temperature your oven is already at. (I like to roast a bunch of beets when I already have the oven on so as to be the most energy efficient—both in terms of the gas used in the oven and my own energy levels)
  4. Cook until the beet is very tender when pierced with a pairing knife
  5. Rub off the skins with a paper towel
  6. Mash the beet and place into a blender with the oil and salt and blend until smooth
