Random Root Bake

  • All the single roots from the fridge
  • 2 cloves garlic, unpeeled
  • any random woody herbs you have around
  • a glug of olive oil
  • salt and pepper
  1. Heat the oven to 400F
  2. Clean the veggies and cut to desired size (the larger the pieces the longer they will take to cook)
  3. Toss with olive oil, garlic, herbs, salt and pepper and transfer to a roasting pan
  4. Roast uncovered until the vegetables are tender and have a crispy skin (about an hour)
  5. Remove from the oven
  6. Squeeze the garlic from its papery skin and lift out the herbs
  7. Serve with a squeeze of lemon or aioli on the side
