Summer Cobbler

This recipe is lifted straight from my time at Zingerman’s Deli. It is quick and easy and basically foolproof as long as you don’t forget the baking powder– as I have done on several occasions. Use any fruit that is available: cherries, peaches, blueberries, raspberries and on and on and on. This recipe also scales up beautifully so if you need to make 4 hotel pans of cobbler, this dish is your friend.

  • 2 pts fruit
  • 1 C milk
  • 1 C all purpose flour
  • 1 C sugar
  • 1 T baking powder
  • pinch of salt
  • 1 stick butter
  1. Heat oven to 350F
  2. In a large bowl whisk the flour, milk, sugar, baking powder and salt
  3. Place fruit in a 9×9 baking dish
  4. Pour batter over fruit
  5. Dot with butter all over especially in the edges. And don’t skimp, it shows.
  6. Bake until top is golden and batter is baked all the way through
